Could I think of the situation as a dynamic output impedance being changed when the current begins to be limited by the opamp?
Datashert, the real question is I don’t get the fact the zener is being able to clamp the output voltage without a resistor in series with it. The small signal output impedance is due to the op-amp open-loop gain not being infinite.

Looking at Figure 7 the positive current limit applicable to your design is 20 mA but temperature dependent.
